Grassfed Bacon Cheese Burger with Avocado,

Fried Onions and Kale on Cauliflower Bread.

Plus a side of baked rosemary butternut squash fries.

Here is the recipe for the bread:

1) Trim the stems off as best as you can.
2) Blend the uncooked florets in a blender, chop up until very fine.
3) Pour the blended cauliflower “meal” into a bowl and microwave for 4 to 5 min.
4) Spoon into a potato ricer on the finest setting and SQUEEZE the water out.
5) In a large bowl place the cauliflower, 1 large egg, and 1 cup of shredded cheese, and salt and spices to taste (I just add about 1/2 tablespoon of salt).
6) Mix thoroughly
7) Separate into 6 racquetball sized balls
8) Place each onto parchment paper, flatten and make sure all cracks are smoothed out until it looks like a 6″ to 8″ mini pizza (or a square).
9) Bake at 400˚ for 10 min. and them flip onto to new parchment paper and bake the other side for another 10 min.
10) Allow to cool and enjoy!

1) Use a peeler to remove the hard skin from the long part of the squash.
2) Cut it into 3″ to 4″ sections
3) Cut those into the fry shapes
4) Toss the cut up fries with olive oil and salt, pepper, rosemary.
5) Place on cooking wire racks or parchment paper
6) Bake at 400˚ for 20 minutes
7) Flip over and bake for another 20 to 25 min.
